Vegan Breakfast Burritos

  • 5 oz firm tofu (140 g)
  • Extra virgin olive oil
  • ΒΌ tsp ground turmeric
  • Black salt (Kala Namak)
  • Black pepper
  • 4 tortillas
  • Red onion, chopped
  • Tofu scramble
  • 4 tbsp nutritional yeast
  • Simple restaurant-style salsa
  • Avocado, diced

Use a fork to crumble the tofu into bite-sized pieces. Heat some oil in a skillet, add the tofu and the rest of the ingredients and cook the tofu for about 10 minutes. Place the tortillas in a skillet over medium heat and cook them for about 30 seconds on each side. Add the ingredients (red onion, tofu scramble, avocado, salsa and 1 tbsp nutritional yeast per burrito). Fold ends in and roll up.
